3 onions
2 bigger size zucchini
4 big tomatoes (choose different colors if possible)
Olive oil for frying
Chopped coriander leaves
Cumin 1 teaspoon
Cinnamon 1 teaspoon
Turmeric 1/2 teaspoon (increase to 1 teaspoon for Kapha)
Ginger powder 1/2 teaspoon (increase to 1 teaspoon for Vata and Kapha)
Himalaya pink salt ½ teaspoon
Coriander seeds powder 1 teaspoon

Put a bit of olive oil to the saucepan, add cumin seeds and fry them a minute, and chopped onions,
fry until onions are light brown. Add cinnamon, turmeric, ginger powder, Himalaya salt and mix all
spices well, then add coriander powder. Add thereafter chopped tomatoes and chopped zucchini.
Fry on low heat ca 15 min. Before serving add chopped coriander leaves.
Can be served separately with quinoa (balances all doshas), buckwheat (balances Kapha) or with
lentils or can be a dish on its own.
